Ingredients

  • ½ cup unsweetened peanut butter
  • ½ cup coconut oil
  • 2 ripe bananas, peeled
  • 2 eggs
  • ½ tsp vanilla extract
  • ¼ cup monk fruit and Erythritol blend sweetener
  • ½ tsp baking soda
  • 1 tsp kosher salt
  • 1½ cup cassava flour or almond flour
  • 2 scoops vanilla protein powder

Instructions

  1. Preheat the oven to 350 degrees, and line two baking sheets with parchment paper.
  2. Add all your wet ingredients — peanut butter, coconut oil, bananas, vanilla, and eggs — to a mixing bowl or stand mixer. Mix until well incorporated.
  3. In a separate bowl, blend your dry ingredients. Then, slowly add these dry ingredients to the wet ingredients, stirring as you add.

Ingredients

  6. Place the trays in the oven, and bake for 15-20 minutes, or until golden brown.
  7. Remove, and let cool on a wire rack. Makes 14-20 cookies.
